Winter Vegetables

The winter season is a time of recovery for us and also for nature. Needless to say, even when nature is resting, it is still busy at work underground. Despite the cold, dry, and windy winter elements, there are many types of produce that prosper in this kind of weather. The best vegetables suited for winter survival are root, tuber, and leafy greens. Following is a list of winter produce. Walk around your local farmers market and see if you can spot them.  Remember, eat fresh, seasonal and local.

  • Winter vegetables include: beets, Brussels sprouts, cabbage, chestnuts, cauliflower, daikon, kale, ginger, onions, parsnips, purple potatoes, radishes, rutabagas, sweet potatoes, turnips, winter squash, and yams.
  • Winter fruits include: grapes, grapefruit, kiwi, mandarin oranges, oranges, persimmons, pomelos, and tangerines.
