True Food Kitchen is one of my favorite chain restaurants in LA. It features dishes that closely adhere to the principles of Dr. Weil’s anti-inflammatory diet. It is a restaurant that embodies delicious flavors, healthy nutrients, environmental awareness and an inviting atmosphere for all to come together. The Kale Guacamole Dip is an appetizer that I often order as a starter. Inspired by the original recipe provided by the restaurant, I decided to recreate one of my own. I think my recipe is simpler and much more flavorful. I hope you make it and will share the goodness of healthy eating with your loved ones!
Kale Guacamole Dip
½ cup baby kale, finely chopped
4 avocado lighted mashed.
1/8 cup cilantro, finely chopped
1/8 cup green onions, finely chopped
½ tsp. sea salt
1 tsp. finely chopped garlic
1/2 tsp. cumin
Juice from 1/2 juicy lemon ( juice from 1 lemon if it is not very juicy)
DIRECTIONS
- Finely chop the baby kale, about 1/2″ wide.
- In a large bowl, lightly mash the avocados. Mix in all the rest of the ingredients.
- Serve with tortilla chips or pita chips.
